Quick & Easy Vegetarian Stir Fry


Ingredients for Stir Fry
16 oz extra firm tofu, cut into blocks
2 bags of frozen asian vegetable mix (no added salts or ingredients)
1 bag frozen broccoli
1 Tsp minced garlic
2-4 Tbsp coconut oil
4 servings (2 cups cooked) brown rice

Mix together all of the following
3 Tbsp soy sauce
4 1/2 Tbsp maple syrup
1 Tsp coconut or sesame oil
¼ Tsp red pepper flakes (to taste)
1/4 Tsp ginger (powder or flakes)
1 Tsp corn starch

Pour 2 Tbsp coconut oil into large nonstick pan & set to medium-high heat
When oil is heated, add tofu blocks into pan and toss until golden
Remove from pan and set aside
Place another Tbsp of oil into pan and add in your garlic and a pinch of salt and pepper
Toss garlic around for 30 seconds then add in all your vegetables
Stir fry for around 8-10 minutes until veggies start to soften & add in water as needed if pan starts to dry out
Add tofu back in and stir all ingredients together
Add in your sauce & mix around until all ingredients are tender
Cook brown rice
Add brown rice into individual bowls & place stir fry on top
