5-Minute Blueberry Muffin (dairy-free)


I created this recipe in honor of going back to school in less than a week. In college, convenience is a commodity, and it is extremely important to me that I am able to make a healthy snack when I'm crunched on time or tired from a long day. I designed this recipe around a typical college student who is a) on a budget, b) lacking space/resources, and c) always busy. This muffin is simple and can easily be modified to fit your dietary needs.

1 banana mashed
1 egg
3 tbsp quick oats
1/2 tsp baking powder
1/8 tsp cinnamon
2 tbsp honey
1/4 tsp vanilla (optional)
Pinch of salt

Combine wet ingredients in one bowl and dry ingredients in another
Fold dry ingredients into wet ingredients and then add in blueberries
Microwave for about 3 minutes depending on your microwave & top with extra blueberries
