Chocolate Covered Almond Pudding Parfait

I've been out sick for a couple weeks if you're wondering why I have been a little MIA!

While I was sick I couldn't do any outfit posts, but luckily I created a few recipes I know you'll enjoy! This parfait is perfect for anyone who is sick of the typical yogurt parfait and needs a little extra protein. You can customize it and add any flavors or toppings, which is why I think this recipe is so great.


In a bowl mix together:
1/2 cup greek yogurt
2 tbsp almond butter
1 tbsp coconut oil (optional)
2 tbsp cocoa powder
4-5 tbsp almond milk
1/4 tsp vanilla extract
2 packets of stevia
Pinch of sea salt

This is where you get to be creative!
Take a small glass cup and take almonds, coconut flakes, granola, or any topping you like & put a layer on the bottom
Top with cacao nibs (or whatever your second layer topping is)
Place all of your pudding mixture on top of that
Finish by topping the pudding with more almonds and cacao nibs (or any of the toppings you chose)

All done! Now you have a beautiful chocolate covered almond pudding parfait! Perfect for chocolate cravings, dessert, or a mid-day energy boost!
